Kanten - A fiber from Red Algae (seaweed), it is the Asian equivalent of gelatin without the animal parts. This food is all-natural, low in calories and rich in fiber. Kanten will fill you up, so you don't overeat at meal times. Kanten works well as a soup or juice thickener and is used in a popular Japanese dessert, Anmitsu.
